Spelt Cheese Dumplings with Parsley
Ingredients:
1 1/4 cups white spelt flour
1/4 cup potato starch
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup softened butter
1 egg
1/3 cup low-fat milk
3/4 tablespoon dried parsley
2 tablespoons grated parmesan or chddar cheese
Directions:
Pour flour, potato starch, baking powder and salt in a 3 quart bowl. Mix well. Set aside.
In a 2 quart bowl, cream together the butter, egg, cheese (if desired) and milk. Slowly add the egg mixutre to the flour mixture, beating the mixture with a fork until the batter begins to bubble. Stir in the parsley.
Place 2 quarts of water in a 3 quart pan and bring to a boil over high heat. Using a wet tablespoon, cut rounded spoonfuls of dough from the bowl, and drop the dough into the boiling water. After the dumplings have turned and risen to the top, reduce the heat to low, and simmer covered for 12 minutes. The dumplings are done when you test with a toothpick. Insert the toothpick into the center and pull it out. If it comes out clean, remove tehm from the water with a slotted spoon, and transfer to a serving bowl. Serve immediately.
